Instructions

1

Flavor the Yogurt

In a bowl stir vanilla extract into the Greek yogurt until well combined. This adds a gentle sweetness without extra sugar.

2

Prepare the Fruit

Slice strawberries and gently rinse blueberries and raspberries. Pat dry with a paper towel so they do not water down the yogurt layers.

3

Build the First Layer

Spoon half of the yogurt evenly into two glasses or bowls. Add a layer of mixed berries on top of the yogurt.

4

Add Granola and Repeat

Sprinkle half the granola over the berry layer then repeat with the remaining yogurt and berries. Top with the rest of the granola.

5

Finish and Serve

Drizzle honey over each parfait and sprinkle chia seeds on top. Serve immediately to keep the granola crunchy.

Substitutions

fresh berriesfrozen berries thawed and drained or sliced banana

Common mistakes

Building the parfait too far in advance which causes the granola to become soggy
Using low fat yogurt which results in a watery thin texture that does not hold layers well
Not drying the berries before layering which releases excess liquid and makes the parfait watery
