Instructions
Season the Steak
Pat the steak cubes completely dry with paper towels. This is essential for getting a proper sear. Toss with smoked paprika, garlic powder, and salt until evenly coated.
Heat the Pan
Heat a cast iron skillet over high heat until it is smoking hot. Add olive oil and let it shimmer. Do not use a non-stick pan as it cannot handle high enough heat for a proper sear.
Sear the Steak Bites
Add the steak cubes in a single layer without overcrowding the pan. Sear for 2 minutes without moving them, then flip and sear for another 1 to 2 minutes for medium doneness.
Add the Garlic Butter
Reduce heat to medium low. Add butter and minced garlic to the pan. Toss the steak bites continuously for 60 seconds as the butter melts and the garlic becomes fragrant.
Rest and Garnish
Remove from heat and let the steak bites rest for 2 minutes before serving. Garnish with fresh parsley and spoon any remaining pan butter over the top.
